FROZEN BITES
These Frozen Vital Bites are the perfect snack for hot summer days. Creamy Skyr, fresh berries, and VITAL FLOW provide a fruity refreshment with valuable micronutrients. Coated in crunchy chocolate, these small ice lollies are not only delicious but also a real eye-catcher. The recipe is quick to make and ideal as a healthy snack or summer dessert.
INGREDIENTS
- 400 g soy Skyr vanilla
- 2 tbsp VITAL FLOW
- 150 g strawberries
- 100 g blueberries
- 300 - 400 g dark chocolate (e.g., 85%)
- freeze-dried raspberries as topping
- 6-8 wooden sticks
PREPARATION
Stir the soy Skyr together with a portion of VITAL FLOW in a bowl until a smooth, creamy mixture is formed. Then line a board or plate with baking paper.
Now place two to three tablespoons of the Skyr mixture onto the baking paper and shape them into small circles with a spoon. Cut the strawberries into small pieces and distribute them evenly over the Skyr mixture along with the blueberries. Alternatively, the berries can be stirred directly into the Skyr - this option saves time and results in particularly evenly filled Frozen Bites.

Now carefully insert an ice lolly stick into the center of each circle. If necessary, cover the sticks with a little extra Skyr to ensure they hold securely when freezing. Then freeze the Frozen Vital Bites completely for about two to three hours.
Shortly before serving, melt the chocolate over a water bath or in the microwave and pour it into a deep plate. Dip the frozen bites one after another into the liquid chocolate from both sides, or spread the chocolate over them with a spoon. Immediately sprinkle with the crumbled, freeze-dried raspberries while the chocolate is still liquid.
The Frozen Vital Bites can be enjoyed immediately or stored in the freezer until consumption. For the perfect consistency, it is recommended to let them thaw for about ten minutes before eating.
