SWEET POTATO SALAD WITH CHICKEN AND SHRIMP SATAY SKEWERS

SWEET POTATO SALAD

INGREDIENTS

  • 2 large sweet potatoes
  • 60 ml Ginger Shot Pineapple
  • 10 g balsamic vinegar
  • 20 g organic soy sauce
  • 10 g olive oil
  • Pinch of chili flakes
  • 1 untreated lime
  • 4 sprigs of mint
  • 10 g coriander
  • 1 mango

PREPARATION

Peel one sweet potato and cut it into very thin slices with a slicer or a sharp mandoline. Then cut the sweet potato slices into long, very thin strips. Juice the trimmings and the other sweet potato. Combine the sweet potato juice with pineapple-ginger shot, balsamic vinegar, soy sauce, olive oil, chopped mint and coriander, and chili flakes to make a vinaigrette. Add some freshly grated lime zest and some freshly squeezed lime juice and mix. Then add the sweet potato strips and marinate. Dice one mango and add it to the salad as well.

SATAY SKEWERS

INGREDIENTS

  • 5 deboned chicken thighs
  • 15 prawns
  • 60 ml Ginger Shot Turmeric
  • 20 g organic soy sauce
  • 2 tbsp peanut butter

PREPARATION 

Mix the peanut butter with the ginger shot turmeric and a little soy sauce. Marinate the chicken thighs and prawns in it overnight. The next day, alternately skewer the chicken thighs and prawns on skewers and fry them until crispy on both sides in a pan with olive oil.

PEANUT-ONION-AVOCADO CREAM

INGREDIENTS

  • 150 g peanuts
  • 2 onions
  • 90 ml Ginger Shot Classic
  • 20 g organic soy sauce
  • 25 g butter
  • 15 g olive oil
  • 2 avocados
  • 1 lime
  • Salt to taste

PREPARATION

Finely dice the onion. Then heat the butter and olive oil in a pot and sauté the onion in it. Add the peanuts, deglaze with soy sauce and ginger shot, and simmer for 20 minutes. Then transfer the peanut-onion mixture to a blender and blend with 2 avocados. Season with lime juice and zest and a pinch of salt.

PLATING

Place 1 large plating ring in the center of each plate, as desired. Then evenly fill the ring with the marinated sweet potato salad. Place the fried satay skewers on the sweet potato salad and spread the peanut-onion-avocado cream on top. Garnish with a few coriander leaves.
