BERRY-CINNAMON LAYERED DESSERT
This wonderfully creamy berry-cinnamon layered dessert is the perfect recipe for cold days. The combination of fruity berry puree, aromatic berry-cinnamon ginger shot, crunchy speculoos crumbs, and a creamy yogurt-mascarpone layer makes this dessert the highlight of any winter or Christmas celebration. It's quick to make, guaranteed to succeed, and looks beautifully layered – ideal for guests or as a quick everyday dessert!
- 500 g plain yogurt
- 250 g mascarpone
- approx. 15 spiced speculoos cookies, crumbled
- 300 g berry mix (frozen)
- optional: 1 tbsp agave syrup or honey
- 60 ml Ginger Shot Berry-Cinnamon

For the berries, first place the frozen fruits in a pot with a little agave syrup and slowly simmer over medium heat. Once they are soft, puree everything and then stir in the berry-cinnamon ginger shot.
(Alternatively, you can lightly warm the berries in a Thermomix and then puree them.)
While the mixture cools slightly, stir the plain yogurt and mascarpone in a bowl until a creamy, smooth consistency is achieved. Then prepare several dessert glasses and alternately layer the yogurt-mascarpone cream, the warm berry puree, and the crunchy speculoos crumbs. Simply repeat the layers until the glasses are nicely filled.
Finally, you can enjoy the dessert immediately or chill it for about 30 minutes so that the flavors combine perfectly. For an extra wintery finish, sprinkle some cinnamon on top or use a few fresh berries as decoration.
