SHRIMP SALAD WITH GINGER POMEGRANATE DRESSING

SHRIMP
INGREDIENTS
- 300 g White Tiger shrimp, thawed
- Juice of 1/2 lemon
- 1/2 tbsp olive oil
- 1-2 cloves garlic, crushed
- Salt, colorful pepper
- Parsley, fresh & finely chopped
PREPARATION
Combine shrimp in a bowl with lemon juice, olive oil, garlic, salt, and pepper. Fry in a non-stick pan and then garnish with parsley.
SALAD
INGREDIENTS
- Mixed lettuce (2 handfuls)
- Lettuce (6-7 leaves)
- 1/2 cucumber
- 8 mini vine tomatoes
- 1/2 avocado
- 2 tbsp pomegranate seeds
PREPARATION
Wash and dry lettuce, tomatoes, and cucumber. Tear lettuce into bite-sized pieces, dice cucumber, tomatoes, and avocado. Remove pomegranate seeds (or buy pre-seeded).
DRESSING
INGREDIENTS
- 60ml Ginger Shot Pomegranate
- 2 tbsp dark balsamic vinegar
- 1 tbsp olive oil
- 1-2 tsp fresh lemon juice
- 1 tsp medium-hot mustard
- Salad herbs, salt, pepper, chili
PREPARATION
Mix the dressing from the ingredients listed above. Our Ginger Shot Pomegranate gives the dressing a perfect balance of fruity sweetness and a light spiciness that wonderfully complements the flavors of the salad and shrimp.
SERVING
When the shrimp are ready, mix the salad ingredients with the dressing. Garnish with avocado, pomegranate seeds, and shrimp, then enjoy!
