SWEET POTATOES
INGREDIENTS
- 4 medium sweet potatoes
PREPARATION
Wash the sweet potatoes thoroughly and prick several times all over with a fork. Place them in a baking dish or on a baking sheet and bake in a preheated oven at 200 °C (convection) for approx. 45 minutes to 1 hour, depending on the size of the potatoes. They are done when soft when pierced.
BLACK BEAN MIX
INGREDIENTS
- 1 can black beans
- 200 g cherry tomatoes
- 200 g cooked corn kernels
- 1/2 red onion
- 1 small bunch of cilantro
- 1 clove of garlic
- Juice of 1/2 a lime
- 30ML Ginger Shot Classic
- Salt & pepper
PREPARATION
Halve the cherry tomatoes, finely chop the cilantro, and crush the garlic clove. Cut the red onion into fine rings. Combine all ingredients in a bowl and season with lime juice, ginger shot, salt, and pepper.
GUACAMOLE
INGREDIENTS
- 1 ripe avocado
- Juice of 1/2 a lime
- Salt
PREPARATION
Mash the avocado finely in a bowl with a fork. Season with lime juice and salt until the desired consistency is reached.
SERVING
Remove the baked sweet potatoes from the oven, let cool briefly, and cut in half. Lightly mash the inside with a fork. Garnish each potato half with the bean mix, guacamole, and optionally sour cream. Decorate with fresh chili and spring onion rings as desired.
