PORRIDGE
INGREDIENTS
- 100g rolled oats
- 1 pinch of salt
- 1 pinch of cinnamon
- 2 Medjool dates, finely diced
- Zest of 1 organic orange
- 400-500 ml soy drink
- 30 ml Ginger Shot
TOPPINGS
- Pomegranate seeds
- filleted orange slices
- Pistachio butter
- Chopped pistachios
- Cinnamon
PREPARATION
For the aromatic orange porridge with dates, pistachios and ginger, wash the orange thoroughly with hot water, dry it well, and finely grate the zest. Then, remove the remaining peel with a knife and fillet the orange – the juicy orange pieces will serve as a fresh topping later.
Pit the dates and cut them into small cubes. Roughly chop the pistachios and set aside.
Now, lightly toast the oats together with cinnamon and a pinch of salt in a non-stick pan without oil. Toasting brings out the nutty aroma of the oats and makes the cinnamon smell particularly intense – the perfect base for a creamy winter porridge.
Then add dates, freshly grated orange zest, soy drink, and a ginger shot. Simmer everything, stirring constantly, until the porridge reaches the desired creamy consistency. If it thickens too much, add a little extra liquid. If it's too thin, simply stir in a few more oats.
Spoon the finished orange-ginger porridge into a bowl and top with orange segments, pomegranate seeds, chopped pistachios, pistachio butter, and a pinch of cinnamon.
