ALKALINE BROCCOLI GINGER SOUP
INGREDIENTS
- 1 red onion
- 1 clove garlic
- 1 broccoli with stem
- 1 tbsp olive oil
- 500 ml vegetable broth
- 1 handful arugula
- 1 tsp medium-hot mustard
- 100 ml coconut milk + more for garnish
- 1 tsp curry powder
- 30ml Ginger Shot Classic
- Sliced almonds
- Pepper
PREPARATION
For this delicious broccoli ginger soup, first finely chop the onion and garlic. Cut the broccoli with the stem into small pieces. Add olive oil to a pot and sauté the onions until translucent. Add garlic and broccoli and sauté for approx. 3 minutes. Deglaze with vegetable broth and let simmer for 5 minutes until the broccoli is soft. Add mustard, arugula, Ginger Shot Classic, coconut milk, and curry powder to the pot. Puree the soup with a blender or immersion blender until it has a creamy consistency. To serve, garnish the soup with a little more coconut milk, fresh arugula, sliced almonds, and a pinch of pepper. Enjoy!
