PAD THAI

This aromatic Pad Thai is true comfort food, bringing a lot of flavor to your plate with just a few ingredients. The combination of soft rice noodles, crispy pan-fried tofu, fresh sprouts, and a perfectly balanced sweet and sour sauce made from tamarind, lime, and ginger creates a well-rounded, satisfying dish suitable for everyday meals or a special dinner. The ginger shot gives the Pad Thai a pleasant freshness and depth without being too spicy.

Ingredients for the Pad Thai
  • 1 red onion
  • 2 cloves garlic
  • 3 spring onions
  • 20 g roasted peanuts
  • 150 g natural or smoked tofu (firm)
  • 180 g wide rice noodles
  • 1 tsp coconut oil or peanut oil
  • 2 organic eggs
  • 50 g fresh mung bean sprouts

Preparation

First, prepare all ingredients: slice the onion finely, chop the spring onions, finely mince the garlic, and roughly chop the peanuts. Cube the tofu and whisk the eggs in a small bowl. For the Pad Thai sauce, mix all ingredients well and set aside.

Soak the rice noodles in warm water for about 10 minutes, then drain and let them drip dry. Meanwhile, heat the oil in a large pan or wok and briefly and vigorously fry the tofu together with onions and garlic until lightly browned but still firm.

Push the ingredients to the side of the pan, pour the beaten egg into the empty space and let it set. Then add the soaked noodles, the prepared sauce, mung bean sprouts, and spring onions, and mix everything thoroughly. Let the Pad Thai simmer over medium heat for another 2–3 minutes until the noodles have absorbed the sauce well.

To serve, arrange the Pad Thai on plates and top with peanuts, fresh lime wedges, chili flakes, and spring onions. Enjoy immediately, preferably served warm.
